If you’ve been following me on the ‘gram, you’ve seen I was fulfilling my lifelong dream of going to Harry Potter World. It was AMAZING! Seriously. The best. Plus just acting like kids at Universal Studios and Disney World, taking a week off to enjoy some sunshine and warm weather was equally great.
And now here we are getting back into the swing of things post-vacation, which is always a little challenging. Waking up early? Going to work? Grocery shopping? Ugh, that all take a lot of energy. And those people who do all their cooking for the week on Sundays?! How do people do that? But really… I love cooking but apparently I’m also real lazy because that sounds like too much work…
So I rely on easy items for breakfasts and daytime snacks. How bout you? These Perfect peanut butter bars, fruit, and carrot slices is usually what my mid-day meals consist of. Not real interesting but they do the trick, I guess.
But recently I encountered this new, locally-made Lucky Rabbit Granola, which is great for both breakfast or snacks. While I really enjoy making homemade granola, like I mentioned above, I sometimes just don’t have the time or desire to do so (and Brice and I often don’t have the willpower to save any for later once it comes out of the oven!).
Plus, I love the unique and creative flavors Lucky Rabbit offers. My favorite is probably the Curry Miso Matcha made with pumpkin seeds, puffed millet, organic red miso, Oregon hazelnuts, cashews and curry powder, which also makes for a fun topping on salads. On the sweeter side, I was real impressed by their Hot House Flower granola. It is infused with Smith Teamaker’s Hibiscus tea to create a floral, aromatic and bold flavor. Add some plain Greek yogurt, and bam, breakfast is served, just like that.
You can get the more traditional-sized 10 oz bags, or you can also get 4 oz-sized bags, which are great for snacking. I recently took the Big Korean BBQ flavor skiing. With big chunks of oats and nuts, and a bold sweet and salty flavor, it was excellent for munching in between runs. Their Deep Chocolate Paleo Granola, filled with nuts and seeds rather than no oats, is a little softer and chewier than your standard granola, but perfect if you’re in need of a chocolatey yet healthy fix towards the end of the day.

That Hothouse Flower flavor sound AMAZING. I love hibiscus, and I can see where it would be perfect to sprinkle over plain yogurt. I’m like you–I can only plan and cook so much ahead of time!

SO jealous of your trip to Harry Potter World, it looked so fun!! I don’t know how those people do the one day cooking thing either, it sounds like a good idea I’ve just never been able to pull it off. Loving the fun flavors of this granola and their adorable logo doesn’t hurt either, will look for it next time I’m at WF!
