Last summer my husband Brice and I went on an awesome two-week trip to Europe. As a present, Brice had planned a day in Paris for me – an all-day cooking class that included a trip to the local markets, cooking throughout the afternoon, and a 5-course meal. It was one of the most fantastic, fun days I have ever had. Chef Samira, of Food Unites the World, hosted us in her gorgeous apartment near the Arc de Triomphe, where she taught me so many great cooking tips and helped us cook SO much good food!
Recreating Baked’s Brookster brownie/cookie
UPDATE: Since this post was made, the guys from Baked published their recipe for Brooksters! Hooray! You can find that recipe here or in their latest cookbook Baked Elements.
If you read my post back in May about Baked, the amazing bakery in Brooklyn, you will know that a) I am slightly obsessed with this place – I love their cookbooks, I love their cookies, and I even applied for a job there; and b) they sell these amazing treats called “Brookster” – a half brownie, half cookie masterpiece.
Go Ahead, Eat An Oreo!
I finished my marathon! Woo hoo! The first few hours went pretty well (yes absurd I was running that long) but then around Mile 22, my hips hurt and I was ready to sit down, and there were still 4.2 miles to go!
Fortunately I had three friends running with me and family and friends along the course there to cheer me on and keep me motivated. I ended up finishing in 4 hours and 41 minutes, not too shabby given that I never walked and am not the world’s fastest runner anyhow. I can now cross that off my “bucket list!” Not having any interest in waking up early today, I took off work and treated myself to a spa day of a manicure, pedicure and massage! This afternoon I was feeling surprisingly good and thought I really should further celebrate National Eat an Oreo Day, which was yesterday – June 19th. About a week ago, I saw these “Triple Chocolate Oreo Chunk Cookies” on Two Peas & Their Pod blog that looked incredible – cocoa powder, white chocolate chunks, semi-sweet chocolate chips, and Oreos! I was so excited for the excuse to make them! They are really quick and easy, which was perfect seeing that standing for longer than about 15 minutes is still hard for me today! They turned out delicious, slightly fudgy with a nice crisp when you get a piece of Oreo. They are not too rich, but definitely a glass of cold milk finishes off the perfect bite!
