On a warm summer night, you really can’t beat a scoop of ice cream.  Even better if it’s delicious handmade ice cream served on top of a homemade waffle cones or sandwiched between two freshly baked cookies.  If you are thinking this sounds like a great idea, head to Ruby Jewel Scoop Shop in North Portland.

I’m sure you are thinking, “Erin, this is BAKERY bingo. Frozen yogurt is not a pastry nor is it a fancy dessert.”  Ok that is all true, but sometimes you just gotta get a lighter dessert.  As always, after dinner last night I was hoping for some dessert but I didn’t say anything as I was trying to be good this week.  As luck would have it, Brice asked me if I wanted to get fro yo.  Why yes, I would!  It’s fat-free, high in calcium and high in protein – so it totally doesn’t count in my book! 🙂 Continue Reading...
