Well this week has gotten interesting, hasn’t it? As you may know, my full time gig is working at Intel out in Hillsboro. So needless to say, Wednesday got a bit funky for me. After spending a few hours at the gym and grabbing dinner in an attempt to wait out the traffic, it appeared that was a lost cause. Google Maps still showed dark red everywhere with an expectation of 2+ hours home! My friend Rachel and her husband Alex were superstars and generously let us be unexpected house guests super late at night. So at least we didn’t need to sleep in our car!

Have you seen those crazy predictions of what Portland will look like in a few years? There was one in Portland Monthly about a year back that had a drawing of the skyline in 2035. It was insane, filled with huge skyscrapers dotting both sides of the river. The biggest change appeared to be in the Lloyd Center and central Eastside areas.
It is sometimes hard to believe how much this city is changing and how rapidly it is growing. Especially as one of the seemingly few native Portlanders, it is definitely a different landscape than even a few years back and with the construction everywhere, it will just continue to expand.

If you’ve been following the Portland ‘Gram scene at all lately, you know there is something big going on with churros (like this or this). Yes, churros are those fried dough sticks you commonly see at the fair. But of course, these are not those greasy messes that make you regret what you ordered. At 180, these are super gourmet, authentic Spanish “xurros” (that’s how the Catalans spell it). Fluffy dough that is fried to order in front of your eyes, then rolled in cinnamon and sugar or dipped rich chocolate, or even stuffed with the filling of your choice.
